#TBT to last week’s Margot’s Pizza pop-up, the first Monday night event in our current format.
This is a WAY-WAY-WAY-off-the-menu pizza. Somehow Matt Hyland, chef-owner at Emily (Margot’s host/venue), got ahold of a quart container of meatballs from Rao’s. Yes, that Rao’s.
“After service, we’re making a family pie with some of these on it,” he said. “The ultimate one-and-done special pizza.”
Twist my arm, why don’tcha. I even forgot my own grousing on the (now defunct) Slice blog about “meatball pizzas” where the meatball is broken apart are effectively just meatchunk pizzas. ?♂️
The finished pizza wasn’t bad, but it needed something more than just the meatballs, which we all initially thought would carry the pie on their own.
