The 1UP is something I came up with while working a pizzamaking shift at Paulie Gee’s. One of the servers asked for a vegetarian pizza, no mozzarella, and something that wasn’t on the menu already. I scrambled and came up with this:
It’s somewhere between a white and red pizza. On the version I made at Paulie Gee’s (pictured above), the dough is dressed with olive oil then topped with cremini mushrooms, grated Romano, shaved Parmesan, more mushrooms, and then dollops of sauce — with post-oven oregano and black pepper.
For the bar pie version, we substitute our blend of cheeses for the Parm. This pizza will debut on our menu during the October 25, 2014, pop-up.
