A sausage-and-onion\u00a0bar pizza\u00a0from a recent Margot’s\u00a0pop-up at Emily<\/a>.<\/p>\n

I make the sausage in-house, based on a fantastic pizza\u00a0sausage recipe I got from Mark Bello of the Lower East Side\u2019s\u00a0Pizza School<\/a>\u00a0(which you should check out if you haven\u2019t yet).<\/p>\n

This isn’t on the set menu at the pop-up, simply because I don’t think a lot of people like sausage and onion as a combo. Sausage and mushroom, sure. Sausage, pepperoni, peppers, onions, mushrooms\u2026 sure.<\/p>\n

Maybe it’s just me.<\/p>\n

I actually like to make this combo with scant mozzarella and A TON of Parmesan.\u00a0That<\/em> take might even be the pizza that’s closest to my pizza soul. If that makes sense.<\/p>\n
