We started at\u00a0<a title=\"Kinchley's Tavern\" href=\"http:\/\/www.kinchleyspizza.com\">Kinchley&#8217;s Tavern<\/a> in Ramsey, New Jersey, a\u00a0legendary bar-pie joint I had never been to\u00a0despite all my\u00a0years of <em>Slice<\/em>-ing. LOVE.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/margotspizza.com\/wp-content\/uploads\/2014\/08\/Photo-Aug-19-8-06-35-PM.jpg\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-1370\" src=\"https:\/\/i0.wp.com\/margotspizza.com\/wp-content\/uploads\/2014\/08\/Photo-Aug-19-8-06-35-PM-1024x1024.jpg?resize=640%2C640\" alt=\"Photo Aug 19, 8 06 35 PM\" width=\"640\" height=\"640\" data-wp-pid=\"1370\" \/><\/a><\/p>\n<p>I mean, look at that horse outside. WHAT?!? Who does that? Had I not already known what lay inside (thanks to lots of blog posts I&#8217;d read about it), I would have loved the place already. Here&#8217;s the interior:<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/margotspizza.com\/wp-content\/uploads\/2014\/08\/kinchley-panorama.jpg\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-1375\" src=\"https:\/\/i0.wp.com\/margotspizza.com\/wp-content\/uploads\/2014\/08\/kinchley-panorama-1024x358.jpg?resize=640%2C223\" alt=\"kinchley-panorama\" width=\"640\" height=\"223\" data-wp-pid=\"1375\" \/><\/a><\/p>\n<p>As I think about what I&#8217;d like Margot&#8217;s Pizza to look like or embody, I can&#8217;t help think of places like this. I don&#8217;t want to be too kitsch, but I definitely would love to incorporate elements of this classic 1970s &#8220;pizza parlor&#8221; look. What&#8217;s that you say?\u00a0Where&#8217;s the pizza? The closest thing to it I can reference in NYC would be maybe the Gruppo-Vezzo-Spunto empire or Lee&#8217;s Tavern.\u00a0Much different from what we would later have at our second and final stop of the evening, <a title=\"Star Tavern\" href=\"http:\/\/www.startavern.net\">Star Tavern<\/a>\u00a0(which I&#8217;d been to a handful of times before):<\/p>\n<figure id=\"attachment_1373\" aria-describedby=\"caption-attachment-1373\" style=\"width: 640px\" class=\"wp-caption alignnone\"><a href=\"https:\/\/i0.wp.com\/margotspizza.com\/wp-content\/uploads\/2014\/08\/Photo-Aug-19-10-17-41-PM.jpg\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-1373\" src=\"https:\/\/i0.wp.com\/margotspizza.com\/wp-content\/uploads\/2014\/08\/Photo-Aug-19-10-17-41-PM-1024x1024.jpg?resize=640%2C640\" alt=\"Star Tavern pepperoni pizza\" width=\"640\" height=\"640\" data-wp-pid=\"1373\" \/><\/a><figcaption id=\"caption-attachment-1373\" class=\"wp-caption-text\">The pepperoni pizza at Star is much heavier on the cheese and has a more flexible crust than Kinchley&#8217;s.<\/figcaption><\/figure>\n<p>This was a nice trip to take and the first time I&#8217;d\u00a0had other people&#8217;s bar pies since I started experimenting\u00a0with Margot&#8217;s Pizza.
