Which is to say, it\u2019s somewhat fluid.\u00a0The South Shore of Massachusetts <a title=\"hiddenboston.com's list of Boston-area bar pies\" href=\"http:\/\/www.hiddenboston.com\/blogentries\/bar-pizza-0411.html\">may\u00a0have the greatest density<\/a> of this style than any other region, but\u00a0it&#8217;s a genre that appears in other states as well, if\u00a0in slightly different form.<\/p>\n<p>To\u00a0my mind, most bar or tavern pies I\u2019m familiar with and love are:<\/p>\n<ul>\n<li>Very thin crusted<\/li>\n<li>Decidedly crisp<\/li>\n<li>Well-done but not to the point of being burned<\/li>\n<li>Large enough to share but small enough you could house one yourself<\/li>\n<\/ul>\n<p>But that\u2019s the <em>physicality<\/em> of the bar pizza. There is also a communal and spiritual aspect to this style of pizza. The best bar pizza joints are beloved gathering spots that bring together generations and social classes.<!--more--><\/p>\n<p>These are the pizzerias we grew up going to on weekends with our families and friends. They&#8217;re the places your dad took you and that you now take your kids. Those of us who moved away from home love them from afar and head there first thing after blowing into town for a visit.<\/p>\n<p>Those elements together define &#8220;bar pizza&#8221; in my book.<\/p>\n<h2>But isn&#8217;t any pizza served in a bar by definition &#8220;bar pizza&#8221;?<\/h2>\n<p>I would say no. The places that serve free slices or small pies with a beer often serve something different not only in style but also in intent. There, you are going mostly to drink, with the pizza an afterthought or something to soak up the booze.<\/p>\n<p>At a <em>bar-pizza<\/em> bar, the <em>pizza<\/em> is the focus and the booze is the bonus. Spots like <a title=\"My review of Star Tavern on 'Slice'\" href=\"http:\/\/slice.seriouseats.com\/archives\/2011\/01\/star-tavern-best-bar-pizza-orange-nj.html\">Star Tavern<\/a> (Orange, New Jersey), <a title=\"My review of Colony Grill on 'Slice'\" href=\"http:\/\/slice.seriouseats.com\/archives\/2010\/03\/stamford-ct-colony-grill-awesome-tavern-bar-style-pizza.html\">Colony Grill<\/a> (Stamford, Connecticut), <a title=\"Lynwood Cafe on 'Slice'\" href=\"http:\/\/slice.seriouseats.com\/archives\/2011\/10\/lynwood-cafe-randolph-ma.html\">Lynwood Cafe<\/a> (Randolph, Massachusetts),\u00a0<a title=\"Tim Kang's review of Kinchley's on 'Slice'\" href=\"http:\/\/slice.seriouseats.com\/archives\/2011\/04\/ramsey-new-jersey-kinchleys-tavern-review-bar-pizza.html\">Kinchley&#8217;s<\/a> (Ramsey, New Jersey), or <a title=\"Lee's Tavern, on 'Eater'\" href=\"http:\/\/ny.eater.com\/archives\/2011\/12\/who_goes_there_lees_tavern.php#lees-4\">Lee&#8217;s Tavern<\/a> (Staten Island, NYC) may have started out as actual bars but the pizza is definitely the draw these days, and you&#8217;ll find more kids there than actual drunks.<\/p>\n<p>These pizzerias are and aren&#8217;t A THING. The best of them, obviously, have a huge, loyal following and are crowded most nights. But they&#8217;re not courting trends. They&#8217;re classic, they&#8217;re iconic, they&#8217;re eternal. <\/p>\n<p>The spirit of these pizzerias, and their delicious crisp pizzas, are my inspiration for the pies I&#8217;m trying to create for <a href=\"http:\/\/margotspizza.com\" title=\"Margot's Pizza\">my bar-pizza pop-up night<\/a> (details TK). I am trying to meld elements of these places I&#8217;ve visited over the years into a tavern-style pizza that is uniquely my own. <\/p>\n","protected":false},"excerpt":{"rendered":"<p>A bar pizza to me is a smallish, very thin and crisp&ndash;crusted pizza that is usually on the well-done side (but not burned).
